Mike's 'Oh So Cherry' Pork Chops (Serves 2)

Ingredients: 1/2 cup fruit wine (recommend an apple-cherry blend)
1/4 cup balsamic or aged red wine vinegar
1 tablespoon marachino cherry juice, plus 3 cherries mashed
1 teaspoon lemon juice
1/4 teaspoon cinnamon
1/4 teaspoon allspice
Cherry-Flavored BBQ Rub ("Mary's Cherry Rub) or any sweet bbq rub
2 center-cut pork chops, 1"thick or more

Blend the marinade ingredients and coat the pork chops, turning as necessary to coat evenly. Marinade the meat for 3-4 hours. Coat the meat generously with rub. Grill at 350-375F over a medium fire/heat, being careful not to burn the sugary rub. Cook until the pork registers 145F internal temperature. Remove, and let stand for 5 minutes. Enjoy!
